If you know Python already (which seems like a requirement for these courses anyways), you really don’t need to take any of these classes. Read documentation, not class notes, to become a better practitioner. The best way to learn is to simply start using ML libraries. Find a research problem and solve it using ML methods. You can start with a simple problem such as k means clustering and try it with three different methods: native Python, numpy, and scipy. Then move onto using supervised learning such as regressions, neural networks, etc. I’d recommend trying out any model with native Python before using an ML framework, but that’s up to you depending on how serious you are about mastering data science. I'm taking a Python course (Pierian Data) on Udemy, and I'm gotten through 103 out of 182 of the lectures. I have learned some things, like what certain things are and how to do simple tasks. Once there is a homework assignment though , or a challenge, I have no idea what I'm doing, so I just watch the solutions and code along. Is there something else I should be doing? Is there a resource that I should be practicing on? Or is there another type of media I should use to learn, like a book?
I just feel like if I'm more than half way through the course, I should be able to do anything at all. The only thing I can do is pretty much just printing something.
What scares me is I have other languages to learn on Udemy as well, and I have heard that Python is the easiest.
I would love if someone could tell me something I could do to retain way more information and practice more.

You can't expect to passively absorb stuff like that. After every single topic, you should be immediately trying to apply it in a small test program. Write out some test code and explore the topic. Does it behave as you expect? If it doesn't, you'll want to lookup the docs for the topic, do some more research, and play around some more. Stuff like courses on Udemy are largely overviews and introductions into things you should be practicing yourself.
