I have an APC UPS that I added batteries to so it'll last even longer than intended. I like to use powerchute just to monitor battery voltage and such, not to turn off this PC since with this UPS it'll last hours and we basically never have a power outage that long. However... even after I disable shutdown features in powerchute it still turns off my PC after maybe 5 min or so. Is my only option to just leave powerchute unplugged? It seems I can't override the shutdown....

If it's a Smart-UPS, perform a runtime calibration, and/or, adjust you "time needed for shutdown" value. If it's a Back-UPS, no. Cheap consumer UPSes are cheap.
