so many things: i/o logging between computer and embedded device like this creating/simulating algorithms and converting them to fixed point like this HDL verification as someone has mentioned like this countless more things - its often used to automate things you dont want to do by hand a lot of the time

Automation testing of embedded systems
At my job we have several python scripts to do test automation. Typically that means plug in PCB into a test fixture with lots of probes and connections then hit a button and wait for green / red light. The python scripts will control the different pieces of test equipment like power supplies, loads and oscilloscopes that are used in the test. As well as communicate with the board to write or read information. I would start by looking at the VISA standard for talking to test equipment and the pyVISA module. There is also openhtf by Google for writing test automation in python. Oh and pyserial there is always a com Port on the board. More on reddit.com
How popular is Python on the embedded ecosystem?
For cloud connectivity any ESP board will do, some ESP boards support micropython out of the box. If any of these micropython boards integrate an HTTP or MQTT library then you are set. Not sure if it supports python but the AI thinker esp32 cam or the ESP-EYE have a cloud amazon certification. They can also run the experimental version of tensorflow lite for microcontrollers, altought right now the C interfaces are really messy and the documentation is next to non existant. Overall, i don't think micropython will ever be as popular as C for microcontroller programming. Sure, data structures are easier to manipulate but to get anything non trivial done you'll need a more powerful SoC. Theres for instance the OpenMV H7 which runs python and can pull basic computer vision assets on 240x120 images. At a whoping 480 Mhz (versus the overclocked 240 mhz of the already potent esp32) you'll be hard pressed to find a more poweful micro. Yet it's biggest problem is the price; 65 dollars for the starter version. Packing all that power in a microcontroller format is very expensive. For cheaper than that you can get the nvidia jetson nano 2gb which runs ubuntu, has a dedicated graphics card and can do Python plus all the machine learning libraries you can possibly think about. The biggest problem with micropython microcontrollers IMO is the mere existence of the SBC market. Edge computing aplications are far more suited for SBCs than for microcontrollers. Unless you are under power constraints, i'd recommend you to look into SBCs. Much better value for your money. More on reddit.com

Yeah task automation, data analysis, plotting graphs, that sort of stuff. I've used python very regularly doing both ASIC design and firmware engineering. Highly recommend having some familiarity!
