I had the same issues in eclipse when first time installed it. Clean up worked for me and closing and opening it again.

Use

 import static io.restassured.*;
import static org.hamcrest.*;

instead of

import static io.restassured.RestAssured.*;
import static org.hamcrest.Matcher.*;
