I'm still exploring the Galaxy Watch Ultra, and here are what stand out :

Ginormous size (60.5g vs. 33.5g)

The Galaxy Watch Ultra is nearly twice as heavy as the Watch5, and I can feel the difference immediately.

However, that extra weight adds to the toughness and durability of the watch. While the Watch5 is lighter and more comfortable, the Ultra's weight reinforces its rugged design.

Smoothness (Wear OS 5.0 vs. Wear OS 4.0)

If you've been using Galaxy Watches for a while, you may have noticed the occasional hiccups within the UI. On the Galaxy Watch Ultra, those issues have been fixed.

Navigating through widgets is smooth, and the touch bezel is nicely tuned, registering every swipe without delay. Even back navigation I feel more optimized.

Crisp display (3000 nits vs. 1000 nits)

The Galaxy Watch Ultra’s display is definitely a highlight. It's steady under the sun. The Watch5, on the other hand, tends to struggle in such conditions.

Optimized gestures

Gestures are far more responsive. I found that actions I needed to repeat on the Watch5 are now registered smoothly on the first try.

Plus, there's a new double pinch gesture, which I find super convenient for pausing and resuming Spotify.

Energy scores by Galaxy AI

The Energy scores feature is a brilliant addition, especially for me who prefer a quick summary over analyzing every single metric.

To define, Energy scores is essentially a snapshot of everything the watch tracks, from sleep patterns to exercise, making it easy to get a quick overview of your performance without diving too deep into the data.

Asking if anyone has upgraded from Watch 5 Pro to Watch Ultra, was it worth it?

I'd enjoy a bigger screen, Watch 5 Pro screen is 45 mm and Watch Ultra is 47 mm. That's not much of an increase compared to a Garmin 50 mm screen. However I want to stay with Samsung.
