Plumber wants to install the water pipes before walls goes up, but I haven't seen any videos on how to install the Kerdi shower pan without having the cement board up first.
He also wants to be present when we install the Kerdi pan because he'll need to cut the drain pipe.
I went and got seven different bids on the job, and none of the plumbers would touch mortar or thinset, and only one had even heard of Kerdi (the plumber we're going with but he has no experience with it).

Call Schluter directly and ask their support dept how best to proceed. They also may hv suggestions for installers if u need.

In the middle of doing a tub to walk-in shower conversion. Due to the condo's strict HOA, the contractors were unable to hot mop the shower pan and opted for Schluter waterproofing instead.
Not sure why they applied RedGard over the entire pan vice just the seams, but turns out it failed inspection because the drain was set too high and pan wasn't sloped towards the drain.
Now they plan on laying down concrete on top of the Schluter to create a slope. Then add another layer of Schluter on top once it dries. Is this the right approach to fixing the issue?

This looks suspiciously like a basic Kerdi-Board panel laid on the floor and not an actual Schluter shower pan, which would explain why there is no slope. I don’t think I’ve ever seen a very large Schluter shower pan with the drain midway but offset left from center like this is. I can actually tell this is a Kerdi board by the manufacturer markings all over that piece. Schluter shower pans have just plain orange waterproofing fabric without any manufacturer markings like this has on it. Also it appears like there is an opening around the drain pipe, nothing should appear like a void around a drain pipe using a Schluter shower pan, the only opening at this point should be the drain hole itself. IMO, your contractor is playing dangerous games in your shower build. Edited to add: Not sure if I misunderstood but I could have sworn it said the contractor said he used a Schluter shower pan? But even worse now. Whatever this guy affixed the Kerdi waterproofing fabric to should have been sloped, tied snugly to the drain and ready to pass inspection if he knew he was facing an inspection. That’s the final part before being able to move forward with tiling to finish the job. Not sure how he did any type flood test with this set up? Meaning there is no “oh I was gonna slope later on and lay another piece of Kerdi fabric over it” That’s insane. Honestly. This is all kinds of crazy.
