I currently have a Brooklinen duvet that is California king size. Can I just cut this in half and sew it closed for the two pieces?

Not sure that’s a good idea, but if you’re going to do it it’d be a lot easier and cleaner to sew two rows of stitches with a small gap between them and THEN cut.

I've considered this. I'd check measurements and be sure that cutting it in half equals a twin. With overhangs it might be too narrow.
