I don't have one; I researched them pretty extensively a few months ago and found that some people love them, but you better be prepared to get a good one, and then to leave it set up in place. And then to have a good workout any time you want flour. I decided it wasn't for me (though apparently you can buy kits to convert them to be attached to a stationary bike so you can power it by pedalling; intriguing, but still not for me ;) ) More on reddit.com
Stone Granit Mill or Wonder Junior Deluxe Hand Grain Mill
There's not a lot of discussion about mills here (and especially not much discussion about hand-powered mills), but there is a pretty active community over at r/HomeMilledFlour - worth checking out. I've been casually looking into this myself and from what I've read, mills with a flywheel are far better than mills without. Also, most people say it takes about 30 minutes on a hand-powered mill to produce enough flour for one loaf. After hearing that, I'm not so sure hand-cranking is going to work for me, so I'm back looking at electric powered mills. I don't know anything about the Granite Mill, but I have seen several reviews for the Wonder Junior Deluxe and everyone who has it loves it (except that it's lacking a flywheel). More on reddit.com
Hand-Powered grain and flour mills?
I've had all the ones on sale in the US except the Diamant. After using all them them for a while, my STRONG recommendation is that if you care about being able to hand-crank it, get a Country Living Grain Mill. That doesn't limit you to only hand cranking the CLGM, I electrified mine. The cheaper ones are a false economy. The Victorio Deluxe, Wondermill Jr. etc all produce really inferior flour to the CLGM and often are harder/more tiring to use as well. More on reddit.com

I’ve been grinding my own flour for 22 years now. Love the freshness of the flour. Here’s a list of my experience: grain lasts a LOT longer than already ground flour. freshness is unparalleled the KitchenAid Grain Mill attachment seriously sucks, avoid at all costs unless you want it for making cream of wheat (very coarse grind) my first mill was a KitchenMill, good but didn’t last as long as I thought it should’ve. second mill I got was the NutriMill Harvest Grain Mill, absolutely excellent and decently priced, watch for sales at big holidays. They seriously stand behind their products. Their customer service is outstanding. No I’m not getting paid for this, hahah. I buy grain in 25 lb bags from Amazon nowadays since grain is more scarce than it used to be in New Mexico. I buy Hard Red Spring Wheat for its higher gluten content for breads, and buy Soft White Winter Wheat for making tortillas. More on reddit.com

I use a Country Living Mill! I'm in love with it, it's probably my favorite thing I own. It takes some labor to mill the flour (maybe 30 min for a standard 500g loaf), but it's honestly not that bad. I just put on a podcast/whatever while I'm milling to get it done. Make sure you get the little extender handle thing to make the milling easier. One thing I wonder about is the flavor difference. From what I've heard, manual mills make flour that taste better than mechanical mills. It might be bullshit, but something about how the motors heat up the flour as it's getting milled, and break down the oils that make up the flavor? I don't know if it's true, but I do know that the flour I mill with my Country Living mill makes absolutely stunningly delicious bread. It does seem like the manual mill makes flour that my starter likes better. In this article about Gérard Rubaud , an artisan baker who famously uses home milled flour, the author writes: "When I arrived at Gérard’s bakery, night was falling and he was feeding the levain, using a blend of [flours] which he had ground less than thirty minutes before, using a manual grinder, and then sifted. In his experience, using freshly milled flour is not only the best but also the only way to capture most of the wild yeasts packed in the kernel. He has also found that using an electrical grinder produces a coarser flour which is less propitious to yeast growth in the levain." This echoes my own experience. Really, though, they're not for everyone. I love how simple the mechanism is, how easy it is to clean, but simple it is to just sit down and mill a little bit of flour to feed my starter every night. But it does take work. A motorized mill would definitely be more convenient. And Country Living mills are pretty expensive.
