Why not just go by the temperature of your components? They are directly affected by the airflow of the case. You can even compare with the panels being on or off to see the temperature is drastically different to see if it is an airflow issue. The idea is that you can attach it to something, have the motherboard read its values, and, for example, to ether just display them in a monitoring software or even use them to regulate the speed of some case fans.
In my case I'd have probably attached them to one of the mechanical hard drives and used the temp reading to regulate the speed of the front/hard drive cage intake fan blowing over them.

For reference, my motherboard is ROG STRIX B650E-F GAMING WIFI, but I was expecting this to be a standardized component like a fan or usb.
What exactly do I buy? I'd like to have a way to see the temp inside to case, the case does not have ideal ventilation so I'd like to monitor the temp to see if I should do something to improve airflow or if its fine as it is.

The 2pin header is for a temperature probe, most people don't use this, since component temps are what matter and your components have sensors already on them. It can however be useful for people running custom loops, obscure components that don't have sensors, thermal testing and benchmarking, or if you have a need to tie a fan curve to a specific area. I don't see it being useful for you when you can simply monitor component temps.

I bought the Asus z370-e gaming MB, and it comes with a thermal sensor connector. The motherboard guide mentions where the pins are on the motherboard, but explains nothing further. In looking inside the box and googling, I've determined it comes with this sensor.
What am I supposed to do with the loose end? I read some posts which suggests I should use tape to tape it to something, but that doesn't seem right.

That is exactly right. It measures temperature so for example you can use temperature in different parts of the case to fine tune Fan speeds. Connect it and tape it somewhere, or just not use it all together.

As the title says,
I am currently using the ASUS Crosshair VIII Impact with a custom waterloop and the latest bios firmware.
My motherboard seemed to have trouble detecting my water temperature sensor. It is listed as N/A in the bios.
At first i thought maybe my sensor was broken so i went to buy a new one (and different brands). To my surprise the mobo still cannot detect my temp sensor.
I have tried all 3 available T_sensor on the motherboard.
Help !!

I do not have a solution. Just want to say that I have the same board, and the BIOS will show the temps from the connected sensors. No need to activate the monitoring. Also, if BIOS doesn't show a value, programms in Windows won't either. Just my experience. I've been using sensors from different brands on the t_sensor header, all worked fine.

Did you go into bios and check that it’s monitoring w_temp? New bios probably reset everything.
