I don't think you can place them on platforms, but you can simulate the looks by using half blocks. Place the sign under a couple of blocks, and then hammer the blocks to get half blocks. It won't let you place the sign directly under half blocks, but it'll stay if you place it before the hammering. Of course, you won't be able to pass through, but if you're going for aesthetics, it'll do the trick More on reddit.com

I feel like I'm going slightly insane. I could have sworn there were tavern and smith signs that you could hang over doors in Terraria, yet I can't find them on the wiki or any way to craft them. Were they part of a modpack? I'm still not sure.

I was trying to make a hanging sign and wanted to use platforms but it wouldn’t let me place the sign. Is it even possible to make a sign hang on a platform?

Try hammering the platforms so they take up the bottom half of the block.
