Hi All,

I'm very new to mason jars and appreciate any guidance on my question. I'm specifically using mason jars to storage dry goods that I will frequently use (spices, tea, nuts, etc.); I'm not using these jars for canning. My question is about the type of lid I should use.

I understand that there are generally 3 types of lids available.

  1. The classic 2 piece lid from Ball (the ring and the seal with the rubber).

I had to look up what a "split type lid" is, and apparently it's what we (and most of the industry, at least in North America) typically call a two-piece lid. The advantage of a two-piece lid for home canning is that it allows for air to vent from under the lid during the canning process, which in turn prevents the jars from exploding during canning, and will cause the jars to form a strong vacuum once the canning process has completed (as most of the air will have evacuated, being replaced with steam, which will later condense back into liquid leaving a vacuum in the headspace). It also has the advantage that verifying the seal is fairly simple: you can remove the ring that holds it on during the canning process, and pick-up the jar by the lid: with a proper seal, the lid should remain tightly on the jar as you lift. A one-piece lid (what you're calling a "normal" lid) will permit venting, but doesn't allow for easily testing the seal. The problem here is that you may have a "false seal" that is only being held down by the screw-band portion of the lid, and as you can't remove this (unlike with the two piece lid), the only way to "verify" the seal would be to open the lid -- at which point the seal would be lost, making the testing process useless. Reputable home canning resources only recommend using two-piece lids in home canners. They have a lower chance of failure, and have the side benefit of being cheaper in the long run (as you can reuse the band portion dozens of times, and only ever need to replace the flat lid each time). They're simply much better lids for canning at home. Another side benefit is that you should never need a gorilla arm to wrestle a stuck lid: the bands on two-piece lids should never be that tight in the first place, and most canners remove them prior to storing their jars anyway. All you need to open one is something to pry them open with (I use the blunt end of a "church key" bottle opener myself -- works every time!). HTH!
