ELI5: UPS and FedEx offer same day shipping for a higher price and 3-4 days for lower. What's the underlying costs that actually makes it cost so much more?

I’m a little confused. Husband took a package to the UPS store on a Saturday and paid almost $100 to have it sent “UPS 3 Day Ground Residential”. The employee told him it would be there Wednesday which was when he needed it to get there. Come to find out it wasn’t delivered until Thursday and UPS store is maintaining that it was delivered “on time”. After several minutes of going around and around with another employee at the store, they are telling me that 1. Nothing goes out on Sat (fine), 2. The employee that told him it would be delivered on Wednesday was wrong, and 3. Monday (or the day it was picked up) doesn’t count towards the calculation of the 3 days; so therefore it is considered delivered on time and we are not due a refund. Can someone please clarify or confirm that this is true? Somehow it makes zero logical sense to me that it actually takes (more than) 4 days to ship a package deemed “3 day”.
So I shipped out 2 playing cards yesterday. The package weight was .33 oz and used a bubble mailer. Can anybody tell me why the heck ups charged me 30 dollars to ship them to Texas from Ohio ? Am I missing something or what?
