Have you done any UI/UX for games? If not, get involved with some game jams or other student/hobby projects. That’s what you need to put in a portfolio. You’ve got to understand the development side for games much more than some other fields due to the more dynamic nature of UI. It’s got to be aesthetically pleasing and provide information that is understandable at a glance. And it needs to be responsive in real time. A surprising side-door into that space is designing UIs for digital slot machines and other interactive gambling. Those companies are less attractive but they work the same muscles.
