I am a self-taught graphic designer. Over the years, I have worked in different styles, with a preference of clean geometry or something that would look good combined with my art (which is again, geometrical - see my profile if you're interested). But what I am really in love with are these vintage/antique designs, like in the examples below.
I want to learn how to work in this style. However, I am intimidated by its visual complexity. I don't know where I should even start. I have made a vintagish-looking redesign of an app's UI so far - https://www.behance.net/gallery/142707207/Forest-App-Redesign-Case-Study.

Check out the work of Annie Atkins. She’s the designer who creates most of the graphic assets (think signage, newspapers, etc; all period-appropriate) for Wes Anderson films. She does a great job being thorough and makes rules for herself, like, using whatever technology available at the time of what was made (lots of times this means by hand.) there’s a great presentation by her on AIGAs YouTube page showing her work and process.

Things to add to your library, digital and physical – Engraving brushes for your software. You can get them for Photoshop or Illustrator but they work differently. You still have to put time into using them well in either. – Old books are good inspiration. Embossed and foil-stamped from the 1800s are pretty stunning. – A few victorian-era display or layered display typefaces. Many come with ornaments to get you started as well. Gibswing and Java Heritage are examples of what I'm talking about. But also become familiar with the styles of typefaces that would have been available during that era. A starting point would be to research "traditional engravers typefaces". – It is possible to find free examples of old engravings you can use because they are in the public domain. Various organizations have made images available of varying image quality. I would try an internet search for "public domain engravings" to get you started. The New York Public Library is one example. Some organization, I forget who, made a massive library of images from nature available on Flickr ages ago. Note that for the English and the Americans, we refer to it as Victorian style, but its roots were in French design starting during the Rococo era centuries earlier (and the French would never name their style after an English queen). You'll need different search terms to get examples from parts of the world that don't speak English.
