Your experience certainly isn't unique. Lots of people get soured on Cuba, especially if they don't have much independent travel experience in countries with shit tourist infrastructure - not to mention the facked up commie politics.
That said, your problems with the SIM card, the difference between CUC & CUP, expensive meals when you were in the most touristy place on the entire island, not downloading Google Maps or Maps.Me in advance, transport between Varadero and Havana Airport.... all those issues are super easy to research and if you had posted on any Cuban travel forum you would have known the deal. You needed to be way better prepared.
But totally agree, Cuba certainly isn't for everyone.
