Hi, animation student here, I’m pretty experienced in Photoshop, but I’ve recently updated to Photoshop 2024, and I can’t figure out how to attach my own colours to the gradient tool. When I click the tool, I can only see the default options given. Any clue?

It's a new setup. There should be a dropdown that says "Gradient" and under it "Classic Gradient". You can change to the classic and it will be like the old version. I like the new one because you can edit it more while it's live on the canvas. But I switched back to Classic because it's faster and easier for me with my type of work.
I can't figure out how to get to the gradient editor
Open a gradient fill adjustment layer and the gradient fill dialog should open. Click the gradient bar in the dialog and the gradient editor should open. More on reddit.com

Is a color mapping to the darkest and brightest color of the layers beneath it
Probably you need a gradient layer and a mask to the layer beneath
