Depends on where you are, if you are in metro NSW, QLD, VIC, WA it will be delivered by UPS, otherwise likely handed over to AusPost

I have a parcel on the way but it stopped tracking as soon as it got to Botany.
Does Auspost/Startrack handle deliveries in the Gosford areas?
I don't want to have to chase this thing up. And it looks like the tracking goes to shit as soon as it clears in Australia.
I see it updates but there is no corresponding update on the tracking. That stopped on the 28th.
I would be thankful for any advice.

Botany "destination scan" is typically the last update before delivery, which is handled by Toll in my experience. Scheduled delivery dates are pretty accurate, although tracking will update if/when they can't make that day.
