Why did God make dinosaurs just to kill them off?

I would hesitate to say that an animal served no purpose simply because that animal went extinct. I don't think that logically follows.

God made a dynamic world. Populations come and go, climate shifts, and animals evolve over time. As a result, various species go extinct. I don't think there's anything special about the dinosaurs in this regard (other than them being really cool). Nor do I think that the animal species currently present today necessarily have more purpose than those that came before.
