On the Windows update page, there's an itty bitty little button tucked away at the top right that allows you to enroll for extended security updates. I was able to get mine extended for another year. Microsoft knows too many of us either can't or won't upgrade, so it tucked it away to the side.

Don't let the deceptive interface fool you! We can still get another year out of Windows 10.

The button should be somewhere around in the area where it says I've already enrolled. It may not appear for certain people, I'm unsure.
