My girlfriend recently built her business website on Wix and we got her a domain and connected it to Wix's nameservers.
Is it possible to buy mail hosting elsewhere and connect that same domain to that, assuming one would use A records and the other uses MX records?

Yes, it's definitely possible. I would recommend to point your Nameservers towards wherever you decide to host the email and then point to Wix using DNS records (CNAME + A record). Wix doesn't allow long strings as TXT records, so if you have your nameservers pointed to Wix, you can't set-up a DKIM.
