There is no literal translation of your name in Arabic. What we try to do is to spell out the name using Arabic letters which makes it sound the same. But your name is fairly common, so there will be no problem at all when you say it. Unfortunately writing it down here only gives me the option in the usage of a small font, which may look a bit complicated. My advice would be to copy it and paste it in a word document, then resizing it...making it bigger so you can spot the little details in it.

My name is Becky. I know some basic Arabic but I don't know if it should be بكي with a diacritic over the "b" or write it as بيكي The thing is, the second is "bee-kee" which isn't how my name sounds. What would the "eh" sound be after the B?

Generally when transliterating foreign names into Arabic, long vowels are used to make it clear - no matter what you will have to explain how your name is pronounced so the goal is to make it as helpful as possible. The two most likely spellings would (I think) be باكي (Baakii) or what I like better بايكي (Baykii).

To pronounce it in Arabic the same as English, I would write it as بَكي otherwise if it is written as بيكي, it would definitely be pronounced, as you suggested, beekee. Same for نِكول and نيكول.

if you had to have it without the ي, in my opinion, مَل is better. but ميل would be a more usual and easier name to understand

مَل is the most accurate, to me. It’s essentially “Mel” with a slight accent and sounds just fine, imagine a non-native English speaker pronouncing “Mel” and you’re there. The “L” is a hard L in Arabic but not in English, so it won’t sound like “mail” or “male” or whichever other mispronunciation you’re worried of. مِل sounds like “Mil” with a hard L, and ميل (which means mile) sounds like “Meal” with a hard L, both fall short imo.

Assuming you want your name spelled the way you pronounce it, I think the closest would be: بريونا Only problem is, Arabic speakers could pronounce this Bir-yo-na as well as Bri-yo-na The way we distinguish between the two is with diacritics (تشكيل) بِرْ يونا - Biryona بْرِيونا - Briyona But تشكيل is rarely used in everyday writing, as it is a hassle and the choice is mostly clear from context in common Arabic words.
