I want to get YouTube Premium so I can go ad free! I hate those stupid ads!
But...I'm thinking about getting the family plan so I can share it with my wife and maybe friends.
QUESTIONs:
> If someone lives outside of my house, can I add them as a 'family' member? Will it work for them?
> How do we manage what each person sees? Can they see my viewing history, playlists, etc., or is that hidden?
> Lastly, does it work as expected: no more ads...?

If you read the TOS, you need to be same household. That said, it works and im not sure they enforce it.

Each person has their own account and will only see their library. Nothing is visible to each other.

It works as expected! No ads on YT is game changer

They have to live in the same physical location, google/yt checks locations. They do remove ads though

I can confirm that at least for me I haven't experienced any issues. Some live in the same house. Others live in a different state. And even gave one to a friend of mine. No one has ever experienced any issues and I've had the family plan about a year now. More on reddit.com

This should warrant regulation, I hold dual nationality and have family in two different countries. Why should I be restricted from joining in either countries? What defines a household? If physical location, why should my household be restricted to a physical location? Why is Google making me contemplate the definition of a household?
