So there's two kinds of 1/2" copper couplings. One has the stopper in the middle so both pipe connections stop in the middle of the joint. The other has no stopper in the middle.
Possibly a stupid question, but when would anyone needed to use a coupling that doesn't have the stopper indent in it? When cutting out a section of pipe to repair a spot?

Yes they are commonly called repair or slip couplings and are designed for when you don't have the room to pull the pipe far enough apart. You can usually offset the pipes fat enough to slide a coupling all the way on one side, line the pipes back up then push it back halfway on the other pipe and solder. Of course it's not always that easy but that is what they were made for.

Theres also 2 different types of stops in the middle of couplings (with stops). One is a ring around the middle, and the other is two little dots/nipples. The little dot ones are nice because if you don't have a slip coupling and need one in a pinch, you can actually file those little projections down to make one. Can't do it with the ring style
