So, I talked to my cabinet coach about this today. He said that it really isn't an issue as you can just put the sink flange over the sides of the cabinet walls and lay the stone over it. He said we'd just size the cabinet up enough (I believe 1 1/2") enough for the walls of the sink to fit between the carcass walls and then (if needed) I can put plywood furring strips on the inside walls of the carcass if the flange doesn't span the carcass walls). My biggest concerns of this approach are: gluing/sealing this to the stone in a watertight way, since we'd be essentially just dropping the stone on top instead of pressing it up from below to mounted stone replacing the sink if it is ever needed.
