If saying son las dos y cuarenta sounds awkward or gringo, then how are literally all spanish speaking natives not math gods
I mean if it's written as a math problem like what is 14 minutes before 3 then sure I can say 2:46 no problem but do I really have to mentally calculate this stuff every time I just want to tell someone the time

Yes, it is perfectly correct to just say the hour followed by the minutes. After the half-hour mark you'll hear such expressions often, but not using them is not wrong or odd. As for amounts like 14 minutes, unless you need to be really precise, you can just round to the nearest multiple of 5 or 10. Because of this precision saying the exact time can be considered a bit more formal, but really you can use it in any situation. I say it all the time like that. By the way, outside of Spain you'll hear (faltan) veinte para las tres very often instead of tres menos veinte.
