Notation is picked up as you go along. It is not advised to try to figure out mathematics by approaching the notation and their definitions. This would be like learning English by reading a dictionary. Normally it starts with a motivation. Say "solving quadratic equations". Then the approaches and methods are explained along with any necessary notations. Math (or any broad subject area) has too many notations and definitions when approached as a whole. Each area of study involves its own notation and that is how a student picks it up. Area by area, subject by subject. More on reddit.com

One thing that really bothers me is how sometimes certain symbols that seems to mean something are just variables like x, y and z, but you can't know that unless you're told so. So I was wondering if there was a sort of dictionary that would allow you to look up their meaning and that's divided into different categories like variables, operators, etc.

It seems like books and papers just assume that the meaning of symbols are known? Am I missing something basic? I want to learn more advanced math but quickly run into a wall of Greek letters and symbols without any understanding of what they mean.

Well, I learned a bunch because the symbols were introduced and explained to me either by a lecturer or the textbook I was using, right before they threw problems that relied on them at me. You would also do well to Google, or ask questions here or on r/AskMath if you want to post pictures.
