Have the option to buy a series 6 or 7 stainless steel Apple Watch. (45mm). They're 100$ difference, but the series 7 has a bunch of bands. (250 vs 350 Canadian). Worth it? Should in just get a series 9 in aluminum instead?

I had the 6 and now a 7. The 7 charges faster and had better battery life. It also has that tiny keyboard that I do like. The 1mm larger screen isn’t that big a deal. If those features mean something to you…then get the 7.

That’s enough to get you through the day, but if you want to do sleep tracking, you’re going to have to charge the watch. That’s where the Series 7 has a serious advantage. Apple’s new watch supports fast charging via a new USB-C charging cable, which Apple claims will charge 33 percent faster than the Series 6...

Apple Watch 7 vs. Apple Watch 6: What's different? | Tom's Guide
October 15, 2021 - Taking advantage of the expanded screen, the Series 7 gets a full QWERTY keyboard for typing out messages. It's the one thing we said Apple Watch 7 should steal from the Galaxy Watch 4, so we're glad it materialized. The Apple Watch 6’s battery life didn’t improve with the S6 chipset.

You should go ahead with the Series 5. Most likely the Series 6 won’t bring any significant changes to the Apple Watch. This is because Apple uses a three-year design cycle for the Apple Watch.
We’ve seen the same design used over Series 1 through 3. Apple only updated the design for Series 4. With Series 5, we only got the always-on display and other minor updates.
New Design vs Old Design
The main rumored feature that Series 6 will bring is sleep tracking. Other features will be better battery life and maybe a new microLED screen technology.
So unless you are really looking forward to the sleep tracking feature, you should be fine with Series 5.
