I recently grabbed some Sony XM5 headphones after reading a lot of good reviews of the sound cancelling microphone that cancels out background noise but you can still clearly hear my coworkers talking around me when l'm on Google meets calls.
After more research, they only really work well when calling from a cell phone and not when connected Bluetooth to Mac.
Anybody have advice on what to use or do for this situation?

The only thing I’ve found that does what you’re asking for really well is the various headsets that are marketed to truckers and others who are working in noisy environments. Blue Parrot is a big name, you can buy them in person at most truck stops if you want to try them on. I’ve got a B450-XT that has been fantastic. I’ve had calls while inside a very noisy cafe and everyone else on the call said I sounded perfect and they couldn’t hear a thing. I’ve tested it while less than 20 feet away from an airplane’s idling turboprop engine and my spoken audio was so crystal clear it was almost creepy. Downside is bulk, but damn if it isn’t comfortable and perfect at what it does.

It works exactly as it is supposed to.
It is a limitation of the Bluetooth protocol, you either have stereo sound/no microphone OR you have mono sound with microphone.
This is why wireless gaming headsets don't use Bluetooth at all. They have their own dedicated 2.4 GHz wireless dongle.
