Hi, I am in the process of buying a new printer, which wil be used only for printing proxies and basically nothing more. I know the gold standard in this thread is 8500, but its quite pricy. Can I achieve similar results with the 2850, or the difference is noticeable?
I know the difference is one more black color in 8500, but I dont know how much it matters.

What do you plan to print on? The 2850 uses pigment-based black ink, which doesn't work well with glossy media. If you set the printer to use glossy paper, it will print "black" using a mixture of the CMY inks. This can result in the "black" having a color cast (usually blue, I believe), and of course consumes the color inks faster. The 8500 uses both dye-based and pigment-based black, and will use whichever is appropriate for the media being printed on. The 2800, 2803, and 2810 use dye-based black. If you'll be printing on glossy media, these might be a better choice than the 2850.

When we filled our new ET-2850 with ink there was a small amount left in each ink bottle (about 10%). Can we just top the tanks up with the left over ink when they go down a bit or do you have to wait for a 100% refill? I notice that the printer performed a fairly lengthy ink preparation (10 minutes duration) after the first refill which used quite a bit of ink so I don't want to trigger another one just to top up by 10%.

The little bit left over should be the amount required to fill the tanks 'after' the charge. And, it's fine to do so. You can top up at any point.

If the 2850 is similar to my ET8500, I topped off the ink with the leftover from the bottles after printing off many photos. I confirmed on the printer that I had filled all the tanks with ink to the full line again. (Good guess on my part when I did that to make it back to full) The printer just guesstimates how much ink is used as it goes to give a fairly accurate picture of what is actually in the tanks on your computer screen or smart phone. So tell your printer if it has been filled but also always do a visual check on the levels when you get your paper refill or picture from the tray.
