What kind of self-appointed flower semantics fascists made this stuff up, and why should I care what they think? Can't I just use a card to explicitly express a sentiment along with the flowers instead of imagining I'm speaking in some kind of vague and completely arbitrary secret code? The only one that holds any water IMO is the association between red and romance. That one I think is generally associated in Western culture.

Even worse than pretending that there's some generally-accepted "meaning" for the color of a flower, it pretends there are specific, objective effects:

Blue flowers should be sent to someone you know who is worrisome. The flowers will calm their worries and diffuse their anxiousness, helping them find peace and clarity.

This is about on the level of homeopathy and horoscopes. I seriously doubt the "blueness" of blue flowers has any specific anti-anxiety effect that, say, purple flowers do not. It's just nice to get flowers.

Speak of the devil, look at lavender!

Give lavender flowers to a person you know who is in need of some downtime. These flowers can help brighten their day while encouraging them to relax.

That says the same thing! They all say basically the same thing!

Meanings and symbols vary with countries ?
Some countries do. Floriography, or Victorian flower language, is pretty standard in the west, but I have found some European countries that have different meanings for certain flowers. I can't remember them off the top of my head, unfortunately. I know that Japan has its own flower language (hanakotoba) and China has some different flower meanings, though I'm much less familiar with them. For example, in hanakotoba, anemone means ephemeral love, the suffering of love, and abandonment, but the colors also have different meanings. Red means "I love you," purple means "I believe in you and wait," and white mean truth, expectation, and hope. As another example, take white carnations (dianthus): In floriography, they mean sweet, lovely, innocence, adoration, and pure love. In Chinese flower language, they symbolize mourning the loss of a mother. In hanakotoba, they mean pure love and "my love is alive." It's interesting you mention roses, because not all roses mean passionate love! Yellow roses mean jealousy, apology, fading of love, dying love, infidelity, friendship, remember me, and welcome back. I can't recall where I read it, but a woman was gifted a bouquet of yellow roses by her husband and her sister told her that wasn't a good thing, because of their negative flower language when it comes to relationships; the woman was given divorce papers shortly after getting the bouquet. Once you know some flower language, it's actually really fun to see how artists and writers incorporate it into their work. Since I knew the language of yellow roses, every TV show and movie I've watched since that features those flowers at weddings, I make a prediction that the couple either won't get married or will get divorced, and I've been right every time so far!
