Looking to replace this kitchen faucet (Rohl A3608 Country Classic) but the same one is over $1,000. This offset installation is uncommon. Is there a faucet that would work here that is not offset? (The hand sprayer can be replaced with a soap dispenser)

Almost any faucet will work there it’ll just be off center. Have you tried going through Rohl’s warranty?

I have a similar solid brass faucet I think the same brand. Cost $1200 with a solid brass side sprayer. I installed it myself and they are pretty simple to disassemble. You could try replacing the guts.
