Great and inspiring list! I'm also in the process of upgrading my kitchen stuff. At least the pots and pans. Already bought better knives, a fancy Japanese cutting board that doesn't dull the edges too much, and proper sharpening tools. Now I'm going to learn to sharpen knives well :) Also got myself a microplane grater some weeks ago. Fantastic for zesting. Also recently bought the Thermapen one, a great cooking thermometer, which I've just began using. Very useful. A staple in my kitchen is the Thermomix mixer and multicooker. Expensive, but worth it to me. One of the most useful things for me is the ability to perfectly mill nuts and seeds, and use it for various "cheesy" sauces which I cook directly in the mixing bowl. Or use it to make almond milk, and then use it for curdling the almond milk with lemon juice to make cream cheese. Plus it can make sauces and one-pot dishes automatically with automatic stirring. Frees up my hands for other tasks in the kitchen. There are cheaper Thermomix knock-offs that work just as well, though. I'm looking into buying an instant pot or a similar electric pressure cooker, an ice cream machine and a stand mixer. One can make bread and cake doughs in the thermomix, but the capacity is a bit small. Also planning to get a Staub dutch oven. But it's a lot to buy, so I'm looking eagerly on the second hand market!
