New stainless steel set - Lagostina vs Cuisinart
I would recommend buying a few at a time. It's not that you get worse pieces in a set in terms of quality but you get pieces you don't really need. For example, I personally have no need of a large 5 qt saute nor an 8 inch fry pan but tons of sets come with them. Also, when you buy a set, usually all the pans are made with the same materials and process. That treats every pan as if it has the same task. But you often want different qualities in different pans. Most pots for example don't need to be that responsive unless you're making candy. Then you might want a super responsive copper pot. By buying seperately, you can tailor each piece of cookware to your needs and pay accordingly. If you go this route, I recommend looking into Cuisinart Multiclad Pros for your fry pans. I recently found a couple at a Ross while staying at an AirBnB and was blown away by their performance. They were basically as good as my AllClad pans at home. Better in some respects. I would also buy some absolutely standard sauce pans, disk or clad, doesn't really matter and one slow heating pot. I'd stay away from the "hand hammered" stuff. I kind of think that's a gimmick and not that it will affect the quality but you're essentially paying for someone to do that. You want as much of your money as possible going into peformance. I'm purchasing a new stainless steel set soon, to replace a terrible no longer non-stick set. At the least, I need 2 to 3 pots and preferably 2 pans but I'm flexible. I'm trying to decide between these two sets:

A couple of questions; which brand is more reliable? Why is Cuisinart so much more expensive than Lagostina when not on sale? Would it be better to buy the cookware individually (I've heard you get worse pieces in a set)? Any other recommendations for cookware?

Also, I'm in Canada and budget is $250 ($200 USD)

This Lagostina set is disc bottom, so you can eliminate that one. The Cuisinart set looks like it's always on "sale" for around $250 everywhere, the retail price is a fiction to make it seem like a good deal. It looks like tri-ply, but they don't give any info on thickness, so it likely has a thinner aluminum core like the All Clad Emeril line and some of the other cheap alternatives. Since you have access to Costco, if you want to buy a set you should just go with the Kirkland 5-ply 10-piece set, it's comparable to All Clad D5 but only $200
