All plants I mentioned are not toxic for cats. If your apartment is really dark you will need some strong led bulbs or grow lights. This site has a solid list. We have five cats that loved houseplants until we started giving them cat grass, now they chew on that and leave my plants alone. Might be worth a shot!

Low light, cat friendly plants (other than spider plants)?
The vast majority of common indoor plants are classified as "mildly toxic" if ingested by people or animals. These are all fine. The worst case scenario is vomiting or diarrhea if your cat eats too much of them. Just avoid "highly toxic" plants like Lilys that can actually kill a cat. Sansevieria, ZZ Plant, Peace Lily(not a Lily), Chinese Evergreen, Pothos are all good plants for north facing windows. Herbs will not grow in low light. A mature plant may stay alive for a couple weeks while you use it for cooking. More on reddit.com
