Was going to say the same things. Get yourself a white levelling clip system. And seal really well especially around the toilet area. We did a marble job once and although we sealed it really well we advised the client to seal it every year for preventative maintenance. Cut to 3 years later and they emailed asking why the tile around the toilet turned yellow. When asking about their sealing schedule she said we Never told her to reseal it. Their young kids were basically pissing all over the seat and bowl and the urine had stained the marble and grout. I then forwarded the client the signed maintenance spec sheet that I had emailed to her outlining the sealing upkeep and whatnot that was sent as part of our conversation. If I planned to take reasonable care of it, but every five years or so refinish, polish, or something like that-- is that effectively a reset, or can some things not be resolved? Or is it outrageously expensive to do? Define for yourself what is reasonable care. If your define reasonable care as, I'll clean up the mess in a bit/after dinner or when the guests go home - Go with granite. If you define reasonable care with cleaning up a mess when it happens - you can handle Marble and the alike. All 3 natural stones require sealing and proper care because each would prefer to return to its unpolished, unfinished form; but we do what we can to prolong that recourse, i.e. polishing, sealing etc. Between the natural stones; Granite is your easiest to care for, Quartzite is the hardest stone, and Marble is the softest. Out of the 3, Quartzite and Marble require more attention to detail or just being more "clean as you go" oriented. Reason being is that Marble and Quartzite both contain calcite and other carbonaceous minerals that are susceptible to etching when it comes in contact with acids and oils/fats. Granite hides the most crumbs and mess (color and overall mineral assemblage in matrix are at the core of this quality). But Marble and Quartzite, being primarily white, imo are the most beautiful as long as they are kept clean and loved. For the sake of discussion, both Quartzite and Marble ought to be cared for and treated the same. The reason is that the not a lot of sales from the quarry to sales on the floor can or know how to distinguish between the two. It's a risk, so treat them the same. If it etches, you'd be hard pressed to fully remove (it runs deep, as a chemical change). You'd end up spending 1000's to fix and not get a true complete restoration. You may but it is not likely. At the same time, etching is a fact of living life and using your kitchen and as the kitchen ages, the stone will form its patina littered with stories and memories of use over good times.
