I used to cook on a Prestige Pro 500. Honestly, for the money I was not really impressed and I think there are better options for the price. If you are planning on spending that much you may consider even a Blaze LTE and possibly the marine grade option. The cast stainless burners are much better than what napoleon offers. Napoleon is mainly an aluminum body but does have painted steel on the backside that is magnetic so it will rust out. I think you will find better luck with a full body 304 or 316 stainless. Blaze and most other grills like it (bull, true flame, summerset) are not 100% 304 stainless with the exception of Lion. You may consider something higher end like a Coyote S-series at $3300. I personally would stay away from New Age. I think their products are not great and tend to fall apart after a couple of years. You honestly get what you pay for. If you are considering a kitchen setup with just a grill and possibly a fridge or sink I would highly recommend Challenger Design - Coastal Series Kitchens. We sell a ton of these and they are super price friendly and they come with the aluminum countertop and are basically an unbox and set in the grill and you're cooking within the hour. It depends. There are certain airflows that should be respected with the grill and the underflow from the drip pan to the back hood of the grill. If these are covered you could impact either the performance or the heat build up of the grill... Honestly with a prestige 500, I wouldn't worry about it too much. I would be more worries about what you are building the enclosure out of. If you are building out of wood, that is not ideal in many ways but mainly in regards to the fact that it is a combustible material. DO NOT BUILD YOUR OWN FIREBOX OUT OF CEMENT BOARD. This is a horrible idea and is not safe ever to do. The grill will give you clearances in the manual. Just glancing on the first couple of pages. They are asking for 24" around the grill to combustibles. •This gas grill must be used only outdoors in a well-ventilated space and must not be used inside a building, garage, screened-in porch, gazebo or any other enclosed area. •Under no circumstances should this gas grill be modified. • Do not operate unit under overhead combustible construction. • Maintain proper clearance to combustibles (27” (686 mm) to rear of unit and 24” (610 mm) to sides). Additional clearance of 24” (610 mm) is recommended near vinyl siding or panes of glass. "At all times keep the gas grill area free from combustible materials, gasoline and other flammable vapors and liquids. Do not obstruct the flow of ventilation and combustion air. Keep the cylinder enclosure ventilation openings (located on the cart sides and at the front and back of the bottom shelf) free and clear from debris." If you do decide to build it in, please vent the kitchen properly, especially if you are using propane bottles which are notorious for leaking. Propane sinks, so vent low. The safest and probably best way to do this is to just make a "cubby" area for the grill to slide into. Take the side wings off and push the cart into that area. Give yourself some room on each side in case you want to upgrade size or brand in the future and then surround the countertop on each side, but do not enclose the grill.
