Why is the abbreviation for the word number “no.” in English, even though there is no letter O in the word number?
The reason we use "no." here is because this abbreviation is borrowed from a Latin word--the abbreviation comes from Latin numero (meaning "by the number"), which does have an o in it. A similar thing happens with the "lb." abbreviation for "pound," which comes from Latin libra. More on reddit.com

Mr Pink: Fuck, man, you panic on the inside -in your head, you know? Τhen you give yourself a couple of seconds, you get a hold of the situation - you deal with it. What you don't do is start killing people!
Mr White: No, what you're supposed to do is act like a fuckin' professional. A psychopath ain't a professional. I can't work with a psychopath.
Is Mr. White is saying “No” to emphasize his agreement with Mr. Pink’s statement?

Mr White is agreeing with Mr Pink. At the robbery Mr Blonde was going crazy and started shooting everyone. Mr White is basically saying "No, you don't start shooting people. You act like a professional." The "no" is towards Mr Blonde's actions, not Mr Pink's statement. It might not be correct English on paper, but in the context of the conversation it makes sense and it's understandable. It might not be correct but it's realistic, which Tarantino was going for. It's similar to my pet peeve when someone asks "Do you mind if I (do something)" and the other person says casually "Yeah, that's fine." The correct answer should be "No, that's fine." But because 'no' is usually a negative and they want to communicate what the person asked for is okay they answer incorrectly with a 'yes'.
