I agree it can get very overwhelming. And to further complicate things, “organic cotton” sheets doesn’t mean that they are necessarily GOTS certified although they often are. Coyuchi makes very nice, organic/GOTS certified percale and flannel sheets but they’re somewhat overpriced so always best to wait for sales. On the cheaper side of the spectrum, target Threshold, California Design Den and Ikea all do very reasonably priced organic, GOTS certified percale sheets. They’re all good no frills every day sheets. If you’re spending more than $100 on a set I’d recommend only buying from companies with a generous return policy that allows you to wash and use the sheets and still be eligible for full refund if you don’t like them. I'm on a similar quest, it's surprising how unpopular green is. You've probably already figured this out, but in addition to forest green you might find search terms such as "fern", "army green", and "moss" to be useful.
