However, this only shows on my iPad, not on my phone and not on my iMac. Bizarre. Can’t work it out. I just received this email 2x but when I checked, the only contacts there were my husband’s email and phone number- which were already there. Why would I have received this? Should I be concerned?

If you didn’t add anyone, review and remove any unauthorized recovery contacts from your account as soon as you can. It depends on if you know your password or know the password but don't have access to your trusted number or device. There's 2 different ways. It also depends on if your on your device, are using a friends device. All of them are similar but starting the process is the key. Instead of listing all the ways which would take a long time. Tell us did you forget your password or do you know the password but can't receive a verification code. And what device are you trying to start account recovery with. Web browser on computer, mac or iphone settings, or a friend's iphone using the apple support app. Then we can tell you the steps to start it.
