The joined and notched collar plus lapel is constructed in that way to make the assembly lay flat. If you want to extend the roll, which is not typical with a flat/notched lapel, but more typical with a rolled/shawl collar, you will have to cut the front opening of the outer fabric a little narrower, so that it will pull the facing outward, and the facing will have to be wider to cover the added curve. But it will be tricky to transition from the flat collar to a rolled open front, and the roll is likely to dislodge the set of the lapel, which may be why you aren't finding the pattern you want. A rolled or shawl collared coat would work better with an open front. The folded open front would still displace the collar, but you'd be able to absorb that wave of excess fabric at the center back seam of the collar. And fyi, there have been some increased problems with Etsy patterns lately in the form of beyond-poor drafting, suggesting outright scams, so I at least am not recommending their patterns unless I already know the shop. Since what you want to do will be tricky, I would definitely make a mock up of whatever pattern you choose. You could use a thrifted, washable blanket for the test. There are tutorials on how to drop the shoulder seams of traditional bodices where the seam runs directly over the shoulder, should you find a pattern with traditional shoulders seams that you otherwise like.
